Truffle Bruschetta with Burrata and Cherry Tomatoes – serves 4-6
Ingredients:
  • 1 loaf of Truffle Baguette (substitute plain baguette or sourdough), sliced around 1 inch thickness
  • 1 ball burrata, strained of it’s liquid and brought to room temperature
  • 200 grams cherry tomatoes
  • Summer truffle slices, to taste
  • Fresh basil,  chopped spring onion (green parts only), or finely chopped chives
Assembly:

Break apart the burrata, and spoon on generously over the bread.  Add cherry tomatoes, summer truffle (add a bit of the oil if you like). Garnish with Basil, spring onion or chives. Serve immediately.
