I posted this beautiful lunch filled with easy summer recipes on Instagram last week and was overwhelmed by your response. Honestly, I can’t say I’m too surprised. There’s something irresistible about an impromptu meal with friends that looks effortlessly elegant but delivers serious flavor – the kind of that makes you feel like you’re living your best life, even if it’s just a random Friday afternoon. These are exactly the type of dishes I lean into when I want to create something special without disappearing into the kitchen for hours.

The menu was simple. A pasta is rich and comforting. The fish, tender and perfectly spiced. And a courgette salad so fresh and summery, it practically dropped you right in the middle of a sun-drenched Italian Riviera. Deceptively simple, but when put together? Pure magic. The secret lies in the balance. You’ve got something creamy, something with a little heat, and something light, bright and crisp. It’s like the holy trinity of satisfying your guests (and yourself) without breaking too much of a sweat. Plus, the prep is surprisingly manageable, which means you actually get to enjoy your own party.
I added a side of asparagus with a simple citrus dressing. The asparagus – along with yellow and green grilled broccoli – were just gorgeous against the colors on the table.

Bucatini Al Limone – serves 4
The mother of all easy summer recipes, this creamy lemon pasta is luxury and comfort twirled together on a fork. While you can easily substitute spaghetti, fettuccine, or tagliatelle, I love using bucatini for one reason. The little hole running down the center soaks up the sauce, giving you an extra hit of lemony cream sauce with every bite. A burst of flavor hidden within each strand.

Ingredients:
- 400g bucatini pasta
- 4 tbsp best-quality olive oil
- 2 tbsp butter
- 120ml heavy cream
- Juice of 2 large lemons (about 60ml)
- Zest of 2 lemons
- 80g Parmigiano Reggiano, freshly grated, plus extra for serving
- Sea salt and freshly cracked black pepper
- chopped parsley for serving (optional)
Method:
- Cook bucatini in well-salted boiling water until just shy of al dente. Reserve 1 cup pasta water before draining.
- Meanwhile in a separate pan, warm olive oil and butter over medium-low heat.
- Add cream, lemon juice, and zest. Simmer gently for 1 minute.
- Add drained pasta with 1/2 cup pasta water. Toss vigorously, adding more pasta water as needed to create a silky sauce.
- Remove from heat, add Parmigiano Reggiano, and toss until melted and creamy.
- Season with salt and pepper, and chopped parsley, if using.
- Serve hot with extra Parmigiano Reggiano
Togarashi-Spiced Red Snapper – serves 4
The togarashi seasoning adds a mild, citrussy nutiness and a touch of heat without overpowering the fish. It works beautifully with the creaminess of the pasta and the fresh courgette salad. Do not overcook! Red snapper is delicate and cooks quickly. Start checking just before the 10 minute mark.
Ingredients:
- 4 red snapper fillets (about 150g each), skin removed
- 2 tsp togarashi spice mix
- 2 cloves of garlic, minced
- Maldon sea salt
- freshly ground black pepper
- 3 tbsp olive oil
- Lemon wedges for serving
Method:
- Preheat oven to 220°C (200°C fan).
- Line a baking sheet with parchment paper.
- Pat fish fillets completely dry and place on prepared baking sheet.
- Coat the red snapper all over with olive oil
- Season generously with salt and pepper, smother on the garlic then sprinkle evenly with togarashi
- Bake for 10-12 minutes until fish flakes easily with a fork (timing depends on thickness, it might take a bit more or less time).
- Transfer to a serving platter, parchment paper and all if the fish is too difficult to remove
- Serve immediately with lemon slices on the side
Courgette and Pecorino Romano Salad – serves 4
You can cut the courgette (aka zucchini) into rounds or strips using a sharp knife or mandoline (be careful!). This salad is best served right after it’s been tossed but can sit for up to 30-40 minutes before serving. Any longer and it becomes watery.

Ingredients:
- 3 medium courgettes – yellow, green or a combination of both (about 600g)
- 2 spring onions, finely sliced
- 3 tbsp best-quality olive oil
- Juice of 1 lemon
- about 60g Pecorino Romano, shaved (or Parmigiano Reggiano)
- Sea salt and freshly cracked black pepper
- Fresh basil leaves for garnish (optional)
Method:
- Using a vegetable peeler, sharp knife, or mandoline, slice courgette into thin rounds. Alternatively, you can create long strips lengthwise.
- Place in a large bowl and season generously with salt. Let sit for 10 minutes to draw out moisture. You can skip this step if your courgette doesn’t taste bitter. If they taste particularly bitter, soak in cold salted water for 15 minutes,, then drain and pat completely dry
- Gently squeeze with your hands to remove excess water, then pat dry with paper towels
- Add spring onions to the bowl
- Whisk olive oil and lemon juice together, then toss with courgette mixture
- Season with salt and freshly cracked black pepper
- Add Pecorino Romano shavings
- Garnish with fresh basil leaves if desired and serve
